Famous Scottish Tablet!

I have realised during this pandemic that there is no flour in the shops. It is impossible to get a hold of a lot of baking ingredients therefore, over the next month or so, I will share recipes which do not require flour. Today I wanted to share with you my Scottish Tablet recipe! I must admit that this is not the best picture of my tablet but I have a new phone and don't have any of my other ones!


Ingredients:


  • 1 whole tin of condensed milk

  • 450g of caster sugar

  • 175g unsalted butter

  • 200ml water


Method:


  1. Line a 22 x 18cm tray with baking paper.

  2. Next, add 175g of unsalted butter and 200ml of water into a pan and put it on a LOW heat until the butter is melted. Do not let the water boil. Make sure that the pan is a big pan and not a small one because the mixture will rise and might go over the side (this has happened to me before!!!).

  3. Once the butter is melted, pour in 450g of caster sugar and dissolve. Make sure you stir this as often as possible.

  4. When you are sure that the sugar has dissolved, you will be able to tell just from looking at it, bring the water to the boil for about 1 minute max.

  5. Then turn down to a simmer and add in the whole tin of condensed milk. The mixture will now appear to be a creamy colour.

  6. For this part I do not like to put a time on it. You have to keep the mixture to a simmer and continue to stir until it thickens. This can be up to 45 minutes or even an hour but it is worth it!!!

  7. The best way to test if it is ready is to take a bit of the mixture with a spoon, splat it on a plate and it should be thick and sticky after around 30 seconds and should not drip or run.

  8. If you feel it is ready, remove form the heat but you MUST continue to stir the mixture for another 10 minutes until it is thickened even more!

  9. Pour the mixture into your baking tin and leave for at least 30 minutes before cutting it!
